Barbecue sauce

Barbecue sauce is a spicy sauce used as toppings that is usually eaten with barbecued food, such as pork, chicken, beef rib or pork. It can be used as a marinade, dripping sauce, flavoring sauce, condiment, or basting. It is easy to make, mostly with ingredients you already have in your pantry. It can be sweet, thick sauce or sour, thin and vinegary or fruity, spicy or smoky.  There are many variations of barbecue sauce, from the South Carolina-Style Mustard Sauce, Eastern North Carolina Vinegar Sauce, Kansas City-Style Sauce, Texas-Style Mop or Basting Sauce or Piedmont, Lexington-Style Dip or the northern Alabama White Sauce. The basic theme is that sweet, tangy and smoky altogether.

Let go off the store brought barbecue sauce and embrace a more satisfying way of making your own barbecue sauce. The idea of a homemade sauce is originality. Choose a large pan for easy simmering and stirring without spilling the sauce over. But not something too big, else the sauce will burn or evaporate too quickly or become thin. The pan should have a thick layer of walls to help spread heat evenly.
